Day 5

8:00: 1 cup of plain, nonfat, organic yogurt

9:30: 1 low call bread (11 grams of carbs, 5 grams of fiber), 2 tbs of horseradish hummus, 2 organic turkey "dogs," 1 cup of goat's milk, 5 Spirulina, multivitamin

12:30: Lunch provided by Boss, due to meeting: 3 small chicken drumsticks, 1/3 cup of mashed potatoes with gravy (just a little), 1/3 cup of green beans.

2:30: 2 slices of low-call bread with thin coat of Earth Balance Omega-3 butter, 1 oz of goat cheese

3:00: 1 light string cheese, 1/5 of a small Haas avocado

5:00: 1 cup of high fiber cereal with 1/2 cup of goat's milk, 1 banana, 1 oz goat's cheese

7:30: cup of arugula, shredded carrots, 1 small Roma tomato, sprinkled with parmesan cheese and all natural dressing; two boiled eggs on top; juice of one lime. 

10:00: Small plate of Garlic Chicken with Quinoa, Basil, and Red, green, yellow peppers topped with sprinkled parmesan (all tosed together--recipe on back of Quinoa box).

Feel good but got really mad at work (which made me feel bad until about 6pm, then I felt better gradually) because the Human Resource Lady forgot to submit the paperwork for my insurance and now, unknowingly, I have gone 1.5 months without insurance and the eligibility period has expired. SOooo I was fuming, but I was able to realize that under normal circumstances I wouldn't have gotten so angry....my hormones just seem to "amplify" any emotion. Hopefully I can work out a solution with them on Monday!

Day 4

Too sleepy to get up and eat....

8:00: 1 cup of nonfat, plain, organic yogurt.

9:30: 1.5 cups of sugarless cheerios, 1/5 cup of the above mentioned yogurt, 1/4 cup of pistachios. 5 Spirulina, multivitamin, 2 "omega-3's"

12:00--whole goats milk--I was afraid of it at first but it is actually delicious!!!! 

12:45: 7 oz of steak, 2/3 cups of organic arugula, 2 small organic Roma tomatoes, shredded carrots, 3 tbs of Newman's Own all natural light balsamic vinaigrette, sprinkled with Parmesan/Romano cheese. Multivitamin

3:00: 2 low-call bread (40 calories, 11 grams of carbs, 5 grams of fiber each), 2 oz of goat's cheese. Held me over quite well. 


5:45: 3 organic turkey "dogs"; needed a little "acidity"--drank 1/2 cup of orange juice from office's kitchen; multivitamin. 


Went out to dinner with Douglas' school friends at "No Mas Cantina." Pretty amazing place!!!

7:45:  Chicken, tortilla (yes, some slices of corn tortilla in the soup), avocado (delicious in soup!), Vegetable Soup; picked at crumbs of tortilla chips with salsa.


10:30: 2 oz of goat's cheese. 

Felt pretty good today....but did try to "curb my enthusiasm" and emotions...this is essential!!!

Day 3

Ok, so I'm writing this day one day late so details are a little fuzzy. I planned to head out early yesterday morning to go refuel at the grocery store...but my car's battery decided otherwise. A frantic day ensued and, with a very bare pantry and fridge and the rush rush rush, I admit my diet was less than ideal. Oh well. Here we go:

7:00: two pieces light string cheese.

9:30: 1/2 cup kidney beans, 3 oz shredded chicken breast spiced with tomato pesto and sprinkled with corn kernels, and 1/3 cup cottage cheese. 5 Spirulina, multivitamin, and 2 omega-3's pills. 

So far so good. 

11:00: 1/3 cup of mixed nuts, 1 tbs of Earth Balance Omega-3 butter, 1 cup of sugarless organic cheerios. 

12:30: 4 oz shredded chicken breast drenched with sugarless ketchup and organic mustard, and 1 grapefruit. multivitamins, calcium supplement

2:00-1 light string cheese

3:30pm: MAJOR BLOOD SUGAR SLUMP...the stress has gotten to me.....my eyes couldn't even focus right....I had protein with me but I was going to hurt someone if I didn't get some carbs fast...I craved complex carbs but all I could find in the office's kitchen was mini-white chocolate covered pretzels....I had four of them and a mint. And I felt good until...


5:30: I didn't have time to prep myself some dinner so I just grabbed the "marmita" or "lunch box" I sent Douglas but he didn't eat--I ate 4 oz of tomato pesto chicken with corn, 3/4 cup of kidney beans, and 1/2 cup of cooked white rice. 


9:00: got home ravished but faced empty cupboards. 2 cups of sugarless organic cheerios with 1 tbs of Earth Balance Omega-3 "butter." 

10:00: 1/2 cup of egg whites, 1/2 cup of cottage cheese, 3 oz of turkey breast "deli" meat (all natural)--cooked all together and sprinkled with seasonings. 

Was WIRED and didn't go to bed until 12:30pm..what is this about? I used to get slurred speech after 9pm...

Day 2

7:00am: 2 pieces of light string cheese

9:00am: 1/2 cup cooked zuchinni, 3 oz grilled chicken, 1/4 cup of boiled quinoa, 1/3 cup of cottage cheese, 1 cup of sugarless oat cereal (wow! I was hungry!)

12:00pm: Ate at an authentic Greek restaurant--Veranda Greek Taverna (highly recommend!) 
Ate a big mixed greens salad with some pieces of fried of zuchinni and spinkled with an olive oil dressing; Ate a very tiny plate (tapas) of a lamb stew (lamb, tomatoes, rice, herbs).

3pm: 1 grapefruit, 2 light string cheese, 1 cup of sugarless oat cereal, 1 tbs of Omega-3 Earth Balance "butter" (felt like I needed the fat), multivitamin (I just bought them today)

5:30: 1 cup of organic, nonfat, plain yogurt, 1 small apple (all mixed up!) multivitamin


7:00pm: 2 cheese crackers from the office's kitchen..


9:00: 1 very thin slice (like a cracker) of french bread with a little butter, juice of two limes with sparkling water and two packs of Splenda (couldn't resist..needed the sweetness)--while I cooked dinner.

10:00: Light omelet: 1/2 cup of egg whites, 1/cup of lowfat cottage cheese, all natural chicken breast "deli" meat; juice of 1 lime with sparkling water and two Splenda; 2 tbs of calcium/magnesium supplement. 

Felt better and more energy today than I have in a long time!!! :) Its working!!!

Day 1

I won't add the water because I sip water all day--usually about 2.5 liters. 
Alarm woke me up at 7:00, and it looked still dark outside. 

7:00= 1 cup plain, nonfat, organic yogurt while in bed. Felt sleepy but good. 

9:00= 2 organic omega-3 eggs, 1/2 cup dry oats (then cooked), 1 tbs of Earth's Balance "butter" (all oils--omega full) Felt great. 

11:11= 1/4 cup of mixed nuts (no peanuts, just hazelnut, brazil, walnut, almonds) Hungry, really wanting some carbs, but feeling good. 

12:30= 8 oz roasted chicken breast, Boiled organic quinoa (1/2 cup), organic mixed salad greens with shredded carrots and cherry tomatoes with 2 tbs of Newman's all-natural balsamic vinaggrette, 2/3 cooked zuchinni. While cooking, took one bite of rice, two of yuca, and one small sip of orange/mango juice (for Douglas, my husband). 1 complete multivitamin. 

Rested for 30 minutes

1-3pm--really sleepy, tired, as usual

3pm: 1 cup nonfat, plain, organic yogurt; one small organic apple


Took my dinner, but things were too  busy for me to eat much at dinner time:

5:30: 1/3 cup organic quinoa (boiled plain)


9:00pm=got home ravished. 2 cups of sugarless organic oatmeal cereal with 1 tbs of Omega-3 Earth Balance Butter, 2 light string cheese; 


10:30: 1/4 cup egg white, all natural turkey breast sliced thin, 1/3 cup low fat cottage cheese; Juice of two limes mixed in with carbonated water. 

Even though it took me too long to eat dinner, I was surprised at how much my food earlier today, although with few calories, held me over well.... My mind seems clearer and more stable... of course I prayed for help :) Knowing you guys will read this has really kept me from reaching for that white, starchy, crusty, delicious...you get it.....french bread I brought home for Douglas :)

Makeover what?!!

Endocrinology--the study of the glands and the hormones of the body and their related disorders. 

Endocrinological Makeover: The process of changing one's diet and lifestyle in order to feel human again :) 

I grew up in a family where you would talk "blood sugar" like you would the weather. Getting low? All you needed was to give the LBS "cue" and you were immediately fed cheese intravenously :) Although I was not immune, I felt a little outside of the "blood sugar loop" since I couldn't sense these drastic swings in my body like others could...  

Enter pregnancy. Woooow. All of the sudden I went from riding the blood sugar carousel to plunging down a very scary rollercoaster (stole my friend Rocio's analogy)....  which has forced me to slash my daily activities to 1/3 of what I used to do... A doctor at progressive medical explained to me that I probably have adrenal fatigue/low functioning thyroid... and I know hypoglycemia completes this set of mind-bending triplets. 

So now I'm forced to go radical--that is--assuming I want to live a semi-normal life :). I plan on logging every bite of food and every supplement---as well as when and how they made me feel... Not an easy task, but invaluable since attention to detail and self-discipline don't come naturally to me. 

All right...here we go!!!
